Balushahi – Sweet Indian doughnut – flaky and crispy

Balushahi or Balushah is a traditional Indian dessert originating from the subcontinent it is wildly popular for its sweet, succulent taste. Despite being called the Indian doughnuts it has a very sweet, flaky and crispy taste. Balushahi is an extremely popular dish in West Bengal, Bihar and Uttar Pradesh, and is also popular in countries like Pakistan, Nepal and Bangladesh.

It is an easy dish to make with an awesome taste!!!

Ingredients

  1. Plain flour (Maida) – 250 gms
  2. Green cardamom powder – 1 tsp
  3. Ghee – ½ cup
  4. Sugar – 250 gms
  5. Baking soda – 1 tsp
  6.  Kesar – 1 pinch
  7. Water – 125 ml

Preparation time 1½ hours

How to make

  1. Take a big bowl with plain flour (Maida) in it add baking soda to it and mix gently with hands.
  2. Start making a dough by adding a little water to it on regular intervals and end up making a soft dough cover it and keep it aside to set.
  3. To make chashni mix sugar and water together in a pan and cook it on high flame for at least 15-20 mins, cook it till it has one string consistency.
  4. Make small sized balls out of the dough and press at its centre to give them a doughnut like shape, and after deep frying in ghee on low flame till golden brown take the sizzling Balushai out and put them in the chashni.
  5. Take them out and dress them with pistachios and almonds.

Voila! your dish is ready to serve!

  • Bonus – Balushahi can be stored for one month without any change in taste.
